I only shoot RAW without jpg. I simply first edit in Camera Raw through Photoshop, then convert to jpg afterwards. I am not sure whether I have answered your questions. :p I don't mind to email you a RAW file so you can try it...
I only edit raw file from M9 and you're correct for the Kodak sensor. I used to own Pentax 645D as well and I still love the overall atmosphere from the M9 with old lens. 645D is too heavy that I have sold it few years back.

Nah it's fine. I was surprised because the colors from my main 2K monitor wasn't vivd.
I personally hate saturated colors as well, this is one of the main reason I kept using CCD and old lens.
I think the colors from CCD is more warmer and much better atmosphere than other digitals. I only use old Leica lens on CCD as I think those new lens are just too saturated.
I was surprised you guys think the photos were too saturated. When I retouched images, I had never increase saturation.
