Hi Patrick, Do you shot in RAW? Jpegs do not have as much dynamic range and you cannot recover the highlights as well as you can in RAW. Also for this type of image it will be a struggle as there is quite a lot of stops between what you need to expose the sky well and the darker shadow areas. You could use the cameras ADL feature for a start. Also use the highlight warning screen when you review the image, this will flash any overexposed areas. Use the EV adjustment to reduce your exposure until there are only a few tiny specs flashing in the preview.
This is one way, there are other ways too all with various pros and cons.
