number 5 would have been awesome should it have been just that little bit sharper!

I am not very good at it thats all, so try to do very little .My daughter tries to show me but its no sinking in must try harder and also i am a bit old school so like to get it right straight from the camera

its very easy and takes little getting used to ...
the d300 is a very good camera ... in fact its a pro camera
pro cameras tend to take less punchy and lower contrast images because they expect you to be pping the images ...
if you really dont want to pp have you tried changing the picture settings to add a bit more colour and contrast in camera?
I definitely agree that it's best to get as much as possible straight from the camera. I tried to avoid pp when I started with digital too. But then an artist friend pointed out that in film I made the shot and then turned the processing over to some one else. I had no control over the post processing and took what I got. I remember throwing away so many slides after a big trip that I wondered about all the wasted money and resources.
Now with digital I don't have let someone else process my photos. I am learning (definitely not an expert) that the camera is only one part of the creative process of making a good photograph. Keep up the good work!
