The first is really good, but I'm struggling with the white-out sky in the second.

I'm interested in how you added the text in the first?
 
Yes I agree now seeing it in the morning. It was grey so brightened it. The text is simply done in photoshop. Use the text tool and you can choose text type, size and colour, then type to your hearts content.
The first image was converted in Raw Therapee , playing around. I like the amount of evaluations that are available within the B+W adjustments.
 
Yes, sorry misunderstood. The white frame is done by going to canvas size, then putting in the size I wish, making sure the canvas is white. On the first pick the image size I reduced to I think 1500 pixels width, then added a 4 inch white canvas. With the second image to get the narrow grey , with an image size of 1500 pixels width, I did a canvas size of 2 pixels in grey, then a canvas size of 4 inches in white.
 
I too prefer the first. I guess my only comment is that they look a tiny bit granular (if you see what I mean). I don't see that in your more recent work.
Thanks Pete, a good spot, I did not notice it that much. I'd pressed or used what they called a 'film like' setting in the Raw Therapee settings. That maybe what it is, I did not notice much difference late last night, and first time I'd used it.
