Landscape Exposures

I always spot meter off of some green trees or green grass where available - it's very close to a grey card when used for exposure metering in this way.

Seems to be spot on - with digital giving you some latitude in each direction for tweaks as required
 
Your histogram display and exposure compensation control are your best friends.

If the light is not flat and even, do a test shot, check the histogram and use your exposure compensation to place the bulk of the graph between the left and right uprights. If it is piled against the right upright, you are blowing out highlight detail. If it is climbing the left axis, you are underexposing. If it fills the whole space and is high on both axes, you are way beyond the dynamic range capability of the camera, so you need to bracket and either use Merge to HDR in processing, or use layers and layer masks to blend both highlight, mid-tone and shadow detail.
