How do you meter in order to get the correct exposure for people wearing dark clothes, especially on sunny days so that they don't just become a black shape?

I cheat and correct in lightroom (exposure control/fill light/recovery using raw) on the odd occasion the nikon matrix metering gets it wrong... The d3 has vast dynamic range so there's plenty of scope for correction.
In very difficult situations I center weight meter of the bride and groom's clothes collectively ... But that's it
